Mint Sticks



Mint Sticks
1. Make Brownies however you want (I made them from scratch with this recipe http://www.foodnetwork.com/recipes/alton-brown/cocoa-brownies-recipe/index.html. (Warning: This recipe says it is only for an 8x8 pan, but it makes them very, very thick, so I "halved" this recipe for an 8x8 pan).

2. Let the brownies cool all the way.

3. Make mint icing as follows: 4Tbsp Butter (softened, not melted), 2c Powdered Sugar, 2Tbsp Milk, 1tsp Peppermint Extract, a couple drops of green food coloring. Mix all together and spread on top of brownies.

4. Place in freezer for about 15 minutes, so the icing becomes somewhat solid

5. Make chocolate icing: Melt 3/4c Chocolate Chips and 3oz Butter in microwave (takes about 60 seconds, but stop and stir every 20 seconds). Spread icing on top of mint-topped brownies.
6. Freeze for another 15 minutes.

7. Cut into "sticks" and serve!
